Ten days of Asian sauces, day 4: cashew chicken

Sometimes the ingredients you’re cooking with don’t need much, if any, help: they’re strong and bold-flavored and can take care of themselves just fine. Cashew chicken is just such a dish. It often comes with a very minimalist sauce: soy sauce, sesame oil, garlic, a little bit of corn starch to thicken it up. There’s nothing there that will compete with or draw attention away from the cashews, but it’s just enough to prevent a stir-fry from being bone-dry.

And it’s good to know that in a hurry you can whip together a stir-fry sauce in 30 seconds.
