Open flame

I’ve been having a bunch of (careful) fun with a culinary torch in the last week.

While working on a recipe for creme brulee, I brushed up on my torching skills. In fact, I made a cool little close-up video of the sugar melting on top of the custard and forming a hard shell.

Culinary torches are good for a lot more than just creme brulee though. Look for more on this topic in the coming days. Until, then, enjoy the video — and the recipe.
