
We’re wrapping up a month of French dishes with Ratatouille — yes, the dish from the Disney movie.It’s an old-school French country vegetable dish, not super fancy, though very colorful. It’s pretty simple to throw together, and also very easy to modify. The recipe is straightforward: seasoned slices of vegetables sitting on a bed of tomato sauce, sort of like a veggie pizza without the crust (just don’t tell the French that).

May this be made sans eggplant, or is that an essential ingredient? Asking for an eggplant-averse friend. Who may be me.
Yes, you can totally make it without eggplant. You can add more zucchini or squash, or substitute in other veggies. I would aim for ones with relatively low water content, as the cooking will cause them to release much of their water and you will end up with a soupy mess.
