
There are lots of variations on Thai curry dishes. For some reason, three of them are named by their color, rather than their taste: green, red, and yellow.
Yellow curry tends to be on the milder side, though it can still be quite flavorful. It’s a nice, hearty dish, it can be made quickly with easy-to-find ingredients, and you can throw whatever vegetables you have handy in with it. I recommend serving it on top of rice, which will soak up all that wonderful tasty sauce.
