
Pad thai is, perhaps more than any other, a signature Thai dish. That is no accident: in the mid 20th Century the prime minister of Thailand ran a multi-year campaign to popularize it (and more generally Thai food) to the world. It’s a classic, not terribly complicated, stir-fry noodle dish that is sold at pretty much every Thai restaurant on the planet.
There is no “official” recipe for pad thai; in fact, there are plenty of variations. This recipe is a good one, and once you master it, you can adjust it to your liking.
