
Chicken satay is a staple at Thai restaurants, usually offered as an appetizer and with a disappointingly few number of pieces of chicken. The nice part about making it at home is that you can make a LOT of it — enough to generously serve a lot of people, or to make it the main course. You can easily scale this recipe up as much as you want. And you can make extra peanut sauce!
At its essence, chicken satay is grilled chicken that has been marinated in a curry/turmeric/spice sauce for a few hours — thus the signature yellow color. There are no magic ingredients; you can buy everything you need at most grocery stores.
Make sure you get some wooden skewers, and make sure you soak them in water beforehand.
