One Dish a Week, Week 63: Chicken enchiladas

Ordering enchiladas at Mexican restaurants in the United States gives you the distinct impression that enchiladas are all about the cheese: lots and lots of it. “Enchiladas” literally means “in chilies.” It’s supposed to be all about the chili sauce, and if you order authentic Mexican enchiladas in Mexico or eat with a Mexican family, you will likely get a very different kind of meal.

This version definitely has cheese, and you can add more if you want, but the star of the show is the chili sauce that surrounds the chicken and gives the whole dish its flavor. The ingredient list looks a bit long, but it’s all simple stuff and the spices are all added together (along with the salt and sugar).
