One Dish a Week, Week 54: Minestrone

And on to year two of One Dish a Week! Thanks for coming along for the ride.

This year, we’re going to change it up a bit: each month I’m going to pick a world cuisine and then each week of that month make a dish from that cuisine. So by the end of the year you will know how to make at least four dishes from twelve different cuisines!

We’re going to start the year by focusing on Italian food for January. And first up is minestrone soup.

Minestrone is a classic Italian vegetable soup that is very versatile: you can make it with pretty much whatever vegetables you have in your kitchen, though there are some standard go-to veggies that I include in this recipe. As you start to play with this recipe, make sure to read the tips and suggestions and particularly pay attention to the notes about when to add “hard vegetables” and “soft vegetables.”
