
Since Cinco de Mayo is coming up, we’re doing Hispanic food for the month of May. Starting with… a classic Tex-Mex dish.
Fajitas are much easier to make than they make it seem in restaurants. If you know their history, this shouldn’t be surprising; it’s literally the dish that ranch cooks could prepare any time and anywhere. All you need is a cast-iron skillet, a heat source, and a handful of common ingredients.
Make sure to dry the meat after marinating it — otherwise it won’t brown (but it will cook!).
Simple recipes like this one are often the best for flexing on the spices; try your own variations and make it your own.
