Salad dressing

Making a basic oil-and-vinegar salad dressing is one of those ridiculously simple tasks, once you know two things: what an emulsifier is, and the optimal ratio of the three main ingredients: oil, vinegar, and mustard. It’s so easy that there’s a good chance you’ll never buy a bottle of Italian or “vinaigrette” dressing from the grocery store again.

But it’s also fun, because you get to make it your own and decide what flavors to add — and there is a wide, wide world of options for you to pick from.

Here’s a recipe for basic vinaigrette, with some tips for where to take it from there. May you never have a boring salad again. (and if this doesn’t do it for you, make some ranch dressing)
