In celebration of the weekend, I just posted a new recipe: blueberry muffins.
Blueberry muffins make me think of my mom. She used to make blueberry muffins often on Saturday mornings, using the recipe straight from the Betty Crocker Cookbook (the late 1960’s edition). In retrospect they were pretty awful, but I was a kid, I didn’t know any better, and I love my Mom.
Here’s a better recipe. It’s a great chance to practice up on quickbreads, and it’s really a generic recipe for a basic breakfast muffin that you can add almost anything to. Just be careful if you’re adding fruit that’s likely to get squished up or that will release a lot of liquid when heated up.
