Rational people can disagree…

You would think that after hundreds of years of people doing it, there would be consensus on the best way to hard-boil an egg. Umm, yeah, not so much.

But the experts do agree on MOST of the best way. Start with the eggs in cold water, not boiling water. Bring to a boil, then remove from heat and let the egg sit in the water to finish cooking. Then move the eggs to icewater to cool them quickly. The exact timing is still a matter of disagreement (not entirely unexpected, given that there is a lot of variation within eggs themselves). I will say, though, that I am constantly amazed at how few people actually understand the principle of carryover cooking — and even among those that do, how many don’t understand that the same principle also applies to “carryover cooling.” If it takes ten minutes to cook an egg through, you can’t cool it off in one minute even if you place it in ice water.

Nevertheless, here’s directions for hard-boiling eggs that follows the consensus advice where it exists and delivers consistent results.
